Kauai Week – Day #3

It’s sad, but this is the final Kauai show. But fortunately we saved some of the best food for last. After a visit to Kickshaw’s food truck in Waimea – we head back to the condo and I make my own version of Huli Huli Chicken, and some Spicy Tuna Poke. If you can’t go to Kauai, making this food will at least put you in a Garden Island state of mind. Aloha.

    i’ve watched Kauai Week twice, now…and probably not for the last time…while drinking most of a bottle of chardonnay. I don’t know how you maintain…I love gin, but I can seriously f-up a recipe with my “creativity” in the kitchen. I found a recipe for Kewpie Japanese mayo, using a seaweed/bonita flake sauce…which I haven’t attempted, yet. I mean, if you have to go to an Asian market for bonita flakes, you may as well just get the native mayo. So the tuna thing will have to wait. But I’m thinking chicken breast tenders on a skewer as the Huli Huli Chicken sounds really good…I’ll get back to you on that. Was that a charcoal grill or gas…I have both, but hardly ever use either. It’s dangerous to grill outside while enjoying a good chardonnay…
