Our Livecast guest is Chef Eduardo Garcia – a humble, charming and amazing guy with an even more amazing story. And after chatting he cooks an uber simple, yet stupidly delicious chicken breast. Simple ingredients cooked simply can truly be incredible. You can, and should watch Eduardo’s full story right here.
I like to use up leftovers, so faced with the remains of a boneless leg of lamb I made a delicious sandwich with a yogurt/garlic sauce (and In about 10 minutes). Sometimes we have lots of time for the Livecast and sometimes we don’t. But we always leave you with something great to eat.
It’s sad, but this is the final Kauai show. But fortunately we saved some of the best food for last. After a visit to Kickshaw’s food truck in Waimea – we head back to the condo and I make my own version of Huli Huli Chicken, and some Spicy Tuna Poke. If you can’t go to Kauai, making this food will at least put you in a Garden Island state of mind. Aloha.

Day #2 of Kauai Week is all food – musubi, plate lunch, huli huli chicken and the list goes on. Damn, we loved it there…
Welcome to Kauai Week – and apart from what we’re calling the ‘Meat Jun Debacle’, it all went relatively smoothly, and deliciously I might add.
