This is a 700 year old appetizer – actually I have no idea how old it is, but the smokiness of the roasted eggplant makes is way delicious. And while I’ll admit roasted eggplant is not the prettiest thing in the world, you won’t care once you start eating it.
Ok, so maybe instant is a bit of a misnomer, but this version is super quick quick and delicious. And wait – don’t forget about the matzo balls of which even your bubbe (if you have one) would even approve.
