We end Shiitake Week by making the most delicious risotto. And while shiitakes are certainly not ‘magic’ mushrooms, the effect will be nearly the same. You’ll be like “oh crap…what just happened??”

And by thing I mean stupidly delicious. Don’t ask – just make it.

It’s Shiitake Week and the lesson here is really about a simple, delicious way to prepare this most glorious of mushrooms. But rather than just serve them plain, we bust out the Searzall and flame up a few sea scallops to top them off.

Side dish – yes. On its own for lunch – yes. Cold outta the fridge late night after some cocktails – oh hell yes!
